Roasted Deboned Baby Chicken

 

INGREDIENTS

  • 2 Baby chickens
  • hand full Fresh thyme and rosemary
  • 200 g Butter
  • 100 baby Onions
  • 4 gloved Garlic
  • ½ cup of Chicken Stock
  • ½ cup of White Wine
  • Salt and pepper to season
  • 300g Baby potatoes (I chose fingers potatoes just because I like they way the look J)
  • 30-50 g of Harissa paste

 

METHOD

 

  1. Make a flavored butter but mixing garlic, fresh herbs, salt and pepper rub your mixture over your chickens.
  2. Slice and par boil potatoes till tender
  3. Now place onions sliced in half , sliced lemons, fresh herbs and carrots in a baking dish and place your chicken on top
  4. Pour your chicken stock and wine in the bottom of the tray, this will create an incredible gravy.
  5. Remember you cooking deboned baby chickens to they wont take long, make sure they are nice and crispy just before removing from the oven.
  6. Then remove your vegetables and grill , if you add sweet potatoes like I did last minute use some of the Gin infused syrup from the dessert and grill on high, the syrup will caramelize with the sweet potatoes and they taste amazing.
  7. Toss your potatoes in the harissa paste, I got this tube of paste from a trip to Dubai which was an incredible trip and I really fell I love with harissa and dates.
  8. Grill potatoes till crispy and sizzling
  9. Reduce your pan juice in a small pot and serve with your dish
  10. I love salads and love a simple green lettuce and lemon and olive oil dressing.
