Avocado Mousse

I had to try to believe it but yes it tastes great. I made this at my #CookingWithClaire cooking class and demo at Banks kitchen in Seapoint. It was a total hit and I cant wait to make a tart and use it as a ganache substitute. Its so quick and easy as well , all you need a food processor or blender and you got decadent chocolate mousse.

INGREDIENTS:

  • 1/2 cup semisweet chocolate (I’m going to use the raw chocolate at WW)
  • 4 very ripe avocados, peeled and pitted
  • 1/2 Cup agave
  • 1/2 Cup unsweetened cocoa powder
  • 1/3 Cup almond milk
  • 1 T Vanilla extract
  • 1/4 teaspoon Salt
  • Berries for garnish

METHOD:

  1. Place the chocolate chips in a small bowl.
  2. Place over a small saucepan of barely simmering water.
  3. Stir until the chocolate is melted and smooth, about 3 minutes.
  4. Set aside to cool slightly.
  5. Place the melted chocolate, avocados, agave, cocoa powder, almond milk, vanilla and salt in a food processor.
  6. Blend until smooth and creamy, scraping the sides of the bowl as needed.
  7. Spoon into glasses and refrigerate till chilled.
  8. Serve with berries
