I had to try to believe it but yes it tastes great. I made this at my #CookingWithClaire cooking class and demo at Banks kitchen in Seapoint. It was a total hit and I cant wait to make a tart and use it as a ganache substitute. Its so quick and easy as well , all you need a food processor or blender and you got decadent chocolate mousse.
INGREDIENTS:
- 1/2 cup semisweet chocolate (I’m going to use the raw chocolate at WW)
- 4 very ripe avocados, peeled and pitted
- 1/2 Cup agave
- 1/2 Cup unsweetened cocoa powder
- 1/3 Cup almond milk
- 1 T Vanilla extract
- 1/4 teaspoon Salt
- Berries for garnish
METHOD:
- Place the chocolate chips in a small bowl.
- Place over a small saucepan of barely simmering water.
- Stir until the chocolate is melted and smooth, about 3 minutes.
- Set aside to cool slightly.
- Place the melted chocolate, avocados, agave, cocoa powder, almond milk, vanilla and salt in a food processor.
- Blend until smooth and creamy, scraping the sides of the bowl as needed.
- Spoon into glasses and refrigerate till chilled.
- Serve with berries
