I love potatoes and my favorite description of a good potato bake was…”It’s like a snog on a plate…” fewer things make me happier than a great potato bake and for Heritage day I made mine for friends at a braai.
INGREDIENTS
- 6 Large potatoes
- 2 Onions
- 2 Crushed garlic
- 1T thyme
- 1 Packet of brown onion soup
- 500ml Cream
- 250g Grated cheese
- Salt and Black pepper
METHOD
1. Slice potatoes (keep skin on or peal) and par boil until they have just start to soften, you don’t want them cooked we just want to shorten the cooking time of your bake in the oven.
* Tip : If a vegetable comes from below the soil it needs to be boiled in cold water, this ensures it cooks evenly
2. In a baking dish layer potatoes, sliced onion rings, garlic, thyme, salt. You should get to make about 3 layers, scatter some cheese on layer one and the final layer. Add salt, pepper and brown onion soup.
3. Pour cream over the bake, making sure that all potatoes are covered.
4. Cover with foil and bake in the oven at 180 degrees for 20 -30 min or until potatoes and onions are soft and bake is bubbling.
6. Grill your potato bake for the last 5 min to make cheese crispy.
