Breakfast has always been an issue for me.
I don’t eat eggs, don’t enjoy cereal …love smoothies but missed breakfast way to many times to live a balanced life.
Until I started making my own granola
Ingredients:
Nuts
Great thing about this recipe is anything goes.
I love the below, 100 g of each
Pecan nuts
Walnuts
Hazelnuts
Pumpkin seeds (woolies have a great sweet vanilla coated range)
You can add almonds, coconut flakes , sun flower seeds the list goes on.
Spices
1 teaspoon of cinnamon, nutmeg and ginger
1 tablespoon of coconut oil
Method:
Melt coconut oil and fry spices
Add nuts (chopped slightly) and coat with spice mixture
Lay nuts onto a baking tray and toast in oven set at 180 degrees (grill ) till nuts brown for 5-10 min (be sure not to burn them, there have been many tears in my kitchen… 1st rule about nuts … never turn your back on them).
ALLOW TO COOL AND ENJOY !!!
I hope you enjoy this recipe. I enjoy mine as a snack or with fresh fruit and greek low fat yoghurt, for a little extra sparkle you can also add chia seeds!!!
