Curry in a hurry

I have to be honest… I’m not sure why, but curries have always been a bit scary for me. Perhaps it’s the layers of spices and flavours, or how it takes so long, or maybe it is trying to understand all the spices. Luckily, if curries are not your speciality either, this recipe is your curry in a hurry! You can keep in your back pocket, and what’s best is that you can make it with pantry basics.

I made this curry after watching one of those three minute recipe clips in between cooking shows, and I loved every second of it. I finally got some great curry tips, too. The chef explained that chilli powder is the mother of all spices, added to dishes for its smoky flavour – not actually for heat. Turmeric powder is the father of Indian spices. It is a root, and provides earthy flavour, and as the chef explained, lands you perfectly in Indian flavour territory. Then, for our last spice, garamasala is the grandmother of spices. I really liked that analogy, and think it’s a clever way to learn your different spices and assign importance to make it easier to remember :-)

Fuss-Free Chicken Curry in a Hurry

Ingredients

  • 1 T black mustard seeds
  • 1 onion
  • 2 T each garlic and ginger
  • 300g chicken
  • 1 t chilli powder
  • 1 t turmeric powder
  • 1T garamasala
  • 100g ground almonds
  • 100 ml plain yoghurt
  • 100 ml coconut cream
  • Handful of coriander
  • 2 slices of fresh chilli

Method

  1. In a hot pan coated with oil, add your mustard seeds – when it starts to become aromatic, add onions, then garlic, ginger and chicken

2. Seal your chicken, and once browned, add your spices.

3. Add yoghurt and coconut cream – I wanted to serve this with rice so added a lot of liquid, but for an alternative, use less liquid and follow my tip below.

4. Put the lid on pan, and allow to simmer as the chicken cooks through.

5. Add ground almonds five minutes before serving.

6. Serve in a big dish garnished with coriander and sliced fresh red chilli.

Tip

For a carb free curry, serve your curry in a hurry in lettuce cups, or with cauliflower rice or even mash!
